I made soufflé for the first time last night, which consisted of making chocolate pudding and meringue and mixing it together. Watching the egg whites and powdered sugar turn to beautiful meringuey snow and the soufflé rise in the oven made me absolutely giddy. Note: When making meringue, don’t you dare let a little bit of yolk into the egg whites for it will not transform into meringue.
